Wilderness Recipe – Cherry Mango Apple Orzo Breakfast

kennicott glacier backpackingSpice up your breakfast rotation on your next Alaska backpacking trip with this delicious sweet breakfast! Created by our own Chef BoyarDurfee (Lead Guide Chris Durfee), this fruit-packed breakfast is sure to fuel you for your day’s adventures!

Serves: 4 people, or 3 hungry guides
Ingredients:
  • 1 cup orzo
  • 1 cup dried cherries
  • 1 cup dried mango (chopped) or dried apples
  • 1/2 cup pecans (chopped)
  • 1/2 cup powdered milk (non-fat dry milk)
  • 1 tsp cinnamon
  • 2 Tbsp freeze-dried maple syrup
  • 1 tsp allspice or extra 1/2 tsp cinnamon, 1/2 tsp ground cloves, 1/2 tsp nutmeg
Directions:

Add all ingredients to the pot. Add just enough water to cover the ingredients (about 4 cups). Bring mix to a boil and cover. Reduce heat and simmer for 10-12 minutes while stirring occasionally. Tip: Cover pot to decrease cook time and save fuel.
