We sure have a lot to be thankful for, don’t we? This Thanksgiving, we’re happy to share one of our favorite backpacking dinner recipes – Thanksgiving Dinner!
Our guides often choose to serve this meal on our last night in the backcountry. It’s a great way to encourage everyone to think back on their favorite memories of the trip and be thankful for the amazing experiences shared within the group. So if you’re spending this Thanksgiving in the outdoors this year, here’s a great dinner recipe!
Serves: 2-3 people
- 1 can of chicken (double-bag it in Ziplocs if you don’t want to carry the can)
- 1 box of stovetop stuffing mix
- 4 servings of instant mashed potatoes (usually about 2 dry cups, but depends on brand)
- Optional additions to mashed potatoes – dehydrated peas, corn, or green beans
- Dried cranberries
- 1 packet of gravy mix
Cooking Equipment Needed: 2 pots and a serving spoon
In one pot, follow the instructions on the stovetop stuffing mix (adding the canned chicken early so it heats up nicely). In the other pot, follow the instructions for the instant potatoes (adding any additional rehydrated veggies you’d like), and incorporate the packet of gravy mix (adding just enough water to get the desired potato/gravy thickness). Serve each bowl with the potatoes/veggies/gravy on the bottom and the stuffing/chicken on top! Garnish with dried cranberries for a delicious (almost) home-cooked Thanksgiving Dinner!
